HOME MADE MINI PIES MAKE A PUFF PASTRY

Pastry making can be very boring, maybe its better to buy ready made, i prefer making my own though:
*250g plain flour
*250g unsalted butter
*5ml salt
*3/4cup icy water 


METHOD
1.Sift flour and salt into a bowl, with a round bladed knife, cut up large chunks of butter into the flour, use your hand to bring the flour to a ball adding drops of ice cold water until u have a neat dough, do not over work the dough, chill in the fridge for 20 mins, take out onto a lightly floured board and shape dough into a rectangle, roll it out until 3 times its size, make 3 divisions on the rolled out dough, bring upper third to centre and the lower part over the 2 parts. 
* place in a cling wrap and chill for 20mins or until ready for use.
*roll pastry out and cut into circles of desired size, place your meat in the pastry and fold into shapes you desire, moisten the edges so that the pastry can stick together firmly.
*brush with beaten egg, place on a greased oven proof dish and bake at 180d c for 30 mins or until pies look golden.


PIE FILLING: I USED MUTTON AND CARROT.
*cut up meat neatly into about 1cm cubes, fry onion add meat and cook high heat for 10mins, add carrots cut up abt same size with the meat and cook on low heat until soft, abt 45mins.
N.B the meat should be vry cool when folded into the pastry to avoid melting the pastry.

FISH CAKES

*800g fish,

4medium potatoes,

onion,

2eggs,

handful of jungle oats,

chicken spice,

potato spice,

fish spice,

500ml fresh milk, 


* boil potatoes and keep aside, wash and boil fish in the milk, 
* grate onion, mash your fish with a wooden spoon and remove bones if it has any, peel boiled potato and grate it onto the fish, mix in the oats, eggs, and spices and mix well. 
make the cakes to desired size and fry in hot shallow oil. 
*i _served mine with fresh fried chips and colslow salad.

Banana muffins by Ravisha Chinnappa

Ingredients 
1-1/2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
3 medium ripe bananas
1 large egg
1/3 cup vegetable oil
1 teaspoon vanilla essence

Method:
1. In a large bowl, combine dry ingredients. In another bowl, mash the bananas. Add egg, oil and vanilla; mix well. Stir into the dry ingredients just until moistened. 
2.Fill greased or paper-lined muffin cups half full.
Bake at 375° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pan to a wire rack to cool completely. Yield: 1 dozen medium sized muffins of 6 large muffins.

Creamy samp

Soak samp over night. 
Wash and boil your samp over low heat till it’s cooked and soft. Add chopped red &green peppers,onion and carrot,butter and Cremora.

Sticky chicken:
Sprinkle your chicken with aromat.
Add 2 tablespoons of brown sugar and melt it in your pan. Then add your chicken,put in a half cup of Coca-Cola Coke and close the pan. Cook over low heat till the coke dries up and chicken becomes sticky.

Three ingredients biscuits.

500g wooden spoon margarine
1 cup icing sugar( can make 2 cups if want them too sweet)
6 cups flour

Method
1. Mix/Beat your margarine with icing sugar together with an electrical mixer till creamy. 
2. Add your flour and mix to form a soft dough. 
3. Roll medium balls and press down with a 500ml buddy bottle(cold drink)
4. Bake at a preheated oven 180 C
Put aside to cool completely 
Melt your brown baking chocolate in a microwave then sprinkle on your cooled cookies.
Enjoy.

Fried chicken.

Preheat your oil in a pan.
Boil your chicken pieces(10 pieces)with salt for 5min.Put them in a plate to cool off.
In separate bowls
First bowl beat 1 egg with 2 teaspoons of milk.
Second bowl mix 2 spoons of flour and spices of your choice(I used barbecue spice,chicken spice and brown onion seasoning)
Deep your pieces in egg mixture and coat with your flour mixture then deep-fry your meat till golden brown.
Enjoy.

Caramel sticky buns

3 cups flour
Half cup sugar
1 sachet instant yeast
2 eggs
200mls milk
150 g butter or wooden spoon margarine
Handful raisins(optional)

Caramel sauce for topping

Mix ur dry ingredients,then warm ur milk (not hot) dissolve yeast in the milk.melt ur butter mix all the wet ingredients add in the flour mixer and start knead the dough for 5 to 10minutes ,cover with wet towel and put in warm place to rise until doubled then knead it again then roll with a rolling pin ,then cut 12 lines and start roll with them to make the shape,put in ur baking tray let them rise again preheat ur oven back for 15 minutes when they a done put caramel sauce

Just in case we have new kids, My dessert

Vanilla and Chocolate cake.
2 cups flour 
2 teaspoons baking powder 
3 Eggs
1 cup milk
2 teaspoon vanilla essence
2 tablespoons cocoa powder 
Half a cup oil
1 cup icing sugar 

Beat the eggs and icing sugar together. Add milk, oil and the vanilla essence. 
Separately mix the dry ingredients and then add to your mixture. Divide into 2. Then add cocoa powder to the other mixture and mix. 
Grease your pan and the pour mixture bit by bit until its finished.
Bake until the cake is well done. It can take up to 40 minutes. 
Allow to be cooled and serve with custard.
