RAINBOW SWISS CHARD SALAD 

INGREDIENTS 
Rainbow spinach, shredded
Sliced tomatoes/cherry tomatoes 
Grilled mixed peppers 
Thinly sliced red onion
Cucumber, peeled
Cheddar cheese cubes/feta cheese
Avocado, cubes (optional)

METHOD
Combine all ingredients together and dress with a vinaigrette.
