French toast or French toast torrejas? The differences between them are minimal. Both are equally tasty, and in essence, the way they are prepared differs very little from each other. I love them both equally, but I have to admit that I usually prepare them more the French way because frying them with a bit of butter, tiny, besides giving them an extra spark of flavor, turns out to be easier than frying them in plenty of hot oil.

You can prepare French toast in the blink of an eye and enjoy them for breakfast, which is the time I like them the most. When I make torrejas I usually spend more time in front of the stove, and as I want to put syrup on them, I prefer them when they have been in the fridge longer and have absorbed more flavor. I prepare French toast as soon as I am going to eat it. They are deliciously warm, and you will see how easy and quick they are ready.

Ingredients
4 slices of bread I used white sliced bread
250 ml milk 1 cup
2 eggs
2 tablespoons of sugar
1 cinnamon stick
1/2 tablespoon of cinnamon powder for sprinkling
1 piece of lemon or orange peel I grate it because I like to see the tiny dots
a knob of butter 25 gr
honey or more sugar to taste

Instructions
Put the milk with the cinnamon stick, the sugar, and the lemon or orange peel in a saucepan. Bring to the boil. As soon as it boils, please remove it from the heat and cover it while cooling down. I put icy water in the sink and let it cool a little so that the toast does not break when soaked. You can make this the night before and store it in the fridge, ready to use for breakfast.

Beat the two eggs and mix with the milk already tempered (this is another difference with the torrejas that the egg is not mixed with the milk). Arrange the slices of bread in a bowl and sprinkle them with all the milk.

Heat a frying pan with butter. With a reasonable temperature (not too high), brown the bread slices with the milk they have absorbed. Make them in pairs and let them brown nicely on each side.

Remove them to a plate and put a little honey on top or sprinkle sugar if you like it better. Finally, sprinkle with cinnamon powder.

Strawberry Shortcake Shooters

Simple and fresh, these bite-sized strawberry shortcake shooters are a fun take on a classic recipe.

Perfect Summer dessert! Simple easy no cooking involved! I used fresh strawberries instead of frozen and used real whipped cream. Rather than the cake being the top layer I opted to keep the whip cream on top to keep the cake moist and fresh. I like the lighter angel food cake in a trifle over a pound cake or yellow cake. This is great to whip up for a cook-out and elegant enough to serve to guests.

Easy when you just need something easy to do and want a dessert. The strawberries make the whole dessert when you use fresh. I cut up the pound cake into 1″ pieces and used canned whip cream because we like the real whipped cream taste over the frozen type.

No bake cheesecake recipe:

Take 12 oz (1 1/2 block) cream cheese at room temp and mix until fluffy (about 2-3 minutes).
Add in about 2 cups powdered sugar and mix.
Add in 1 -2 tsp vanilla extract.

Strawberry syrup recipe:

Puree about 10 medium-size strawberries.
Add in 1/2 cup sugar.
Boil on the stove for about 10 minutes.
take 1 tablespoon corn starch and mix with 1 tablespoon cold water. Add into a boiling strawberry.
Cool before use.

Whipped cream recipe:

1 cup heavy whipping cream per 1 tablespoon of pudding mix.
Add powdered sugar in to the sweetness level you like.
I did 5 cups heavy whipping cream and 5 tablespoon of pudding mix with 2 cups powdered sugar.

Cheesy Beef & Cabbage Skillet Casserole

This beefy, cheesy skillet meal is a little bit like lasagna and cabbage rolls got married. While we love a meal that’s easy, it has to taste good too, and this one doesn’t disappoint. The mild earthy flavor of cabbage goes so well with sweet tomato sauce and melty mozzarella. It’s a low carb, quick one pan meal that should be a regular in every family’s weeknight rotation. It does comfort, and it does it well. And quickly.

Ingredients

1 pound ground beef
1 medium cabbage, cored and thinly sliced
1 can (14.5 oz) diced tomatoes
1 can (14.5 oz) crushed tomatoes
2 cups mozzarella cheese, grated
1 medium onion, diced
2 cloves garlic, minced
4 tablespoons olive oil
1 teaspoon dried oregano (or more, to taste)
Sea salt and fresh ground pepper, to taste

Preparation

Preheat oven to 400°F.
Heat olive oil in a large oven-proof skillet over medium heat. Add onions and cook until soft and translucent, 5-7 minutes. Add garlic and cook one minute more.
Add ground beef and cook until no longer pink. Add cabbage, crushed and diced tomatoes, oregano, and salt and pepper and saute until cabbage is wilted, about 10 minutes.
Top with grated cheese and bake for 15 minutes.

REFRIGERATOR BREAD AND BUTTER PICKLES

INGREDIENTS:

5½ cups (about 1½ pounds) thinly sliced (about ¼-inch) pickling cucumbers

1½ tablespoons kosher salt

1 cup thinly sliced sweet onion

1 cup (198 grams) granulated sugar

1 cup (240 ml) white vinegar

½ cup (120 ml) apple cider vinegar

¼ cup (50 grams) light brown sugar

1½ teaspoons mustard seeds

½ teaspoon celery seeds

1/8 teaspoon ground turmeric


DIRECTIONS:

1. Combine cucumbers and salt in a large, shallow bowl; cover and chill 1½ hours. Move cucumbers into a colander and rinse thoroughly under cold water. Drain well, and return cucumbers to bowl. Add onion to the bowl and toss with the cucumbers.
2. Combine the granulated sugar, white vinegar, apple cider vinegar, brown sugar, mustard seeds, celery seeds and ground turmeric in a medium saucepan; bring to a simmer over medium heat, stirring until the sugar dissolves. Pour the hot vinegar mixture over cucumber mixture; let stand at room temperature 1 hour. Cover and refrigerate 24 hours. Store in an airtight container in refrigerator up to 2 weeks.

This Bourbon Chicken is so much better than the standard food court recipe! The chicken turns out tender, juicy and loaded with tons of sauce. The sauce is the perfect combination of sweet and savory. I like to double the sauce to have extra to serve over rice. Best of all this recipe couldn’t be easier. This Authentic Bourbon Chicken takes 20 minutes and only one pan. No marinating required. Simply cook the chicken, pour in the sauce, simmer and add in cornstarch and water to thicken up the sauce. That’s it!

Ingredients

1/2 teaspoon sesame oil
1 tablespoon canola oil
2 pounds chicken breast cut into 1 inch cubes
4 cloves garlic minced
1 teaspoon ginger minced
1/4 cup low sodium soy sauce
1/4 cup light or dark brown sugar
2 tablespoons bourbon
1/4 cup rice wine vinegar
1 teaspoon cornstarch
1 tablespoon water
sesame seeds for garnish if desired
green onions for garnish if desired

Instructions

Heat sesame oil and canola oil in a large skillet.
Add in chicken and saute until fully cooked and browned.

Add in garlic and ginger and saute for 1-2 minutes. (Add in more oil if needed)
In a medium bowl combine soy sauce, brown sugar, bourbon and rice wine vinegar.

Add sauce to the chicken and bring to a simmer. Cook for 2-3 minutes.
Meanwhile in a small bowl whisk together cornstarch and water.

Slowly add the cornstarch mixture to the sauce and stir frequently until thickened, 2-3 minutes.
If the sauce needs to thicken more add more cornstarch.
Serve immediately with sesame seeds and green onions for garnish, if desired.

  • 1/3 cup melted butter
  • 1 cup sugar
  • 3 tablespoons of lemon juice
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1/2 cup milk
  • 2 tablespoons of grated lemon peel
  • 1/2 cup chopped walnuts optional

  • 1 cup confectioners’ sugar
