Caramel delight

Ingredients:
2 packets tennis biscuits
500ml fresh cream
1can ( 360ml )caramel condensed milk
1 large Aero chocolate bar
1 large Aero peppermint bar
Vanilla yoghurt

Method
Whisk the cream untill stiff and fold in the caramel condensed milk, layer the biscuit crumbs , crushed chocolates and vanilla yoghurt in a glass finishing with a layer of peppermint bar pieces for 3 hours in the fridge. .garnish with cherries.

Sweet chilli chicken thighs served with potatoe salad and chakalaka

Marinade for chicken-
Sweet chilli sauce,
a bit of tomato paste,
a teaspoon of brown sugar,
chicken spice,
salt,
black pepper.
Mix everything together and marinate the chicken.
Put in the oven for an hour, baste the chicken with the left over marinade while cooking

Potato salad- Boil potatoes in salt, once cooked, drain the water. Fry bacon. Put 3 table spoon of Dijon mustard and a tablespoon of apple cider vinegar. Add spring onion, black pepper

Chakalaka- fry carrots, onion, red, green and yellow peppers, add baked beans, paprika, curry powder, green chillies, BBQ spice, salt and pepper.

Oxtail stew served with brown rice and pumpkin

Brown rice-
Boil brown rice according to instructions
then fry onions and peppers.
Added garlic
and vegetable spice.

Oxtail Stew-
In a bowl,
pour flour,
salt,
black pepper,
mixed herbs
and coat the oxtail in the flour.
Brown the oxtail and then boil until cooked. In another pot, boil carrots, patty pan and baby marrow for 15minutes, when cooked drain the water.

Fry onions, add garlic and add the oxtail in. Then add tomato paste, salt, curry powder and Durban curry cook in sauce and add a bit of water. Then add vegetables and simmer for few minutes.

CHICKEN BREAST STUFFED WITH CAULIFLOWER MASH WRAPPED WITH BACON RECIPE

Ingredients:.
Chicken fillet
Grated cheese
Cauliflower mash (i shared recipe yesterday but added coriander and peppers)
Lemon and herb spice
Sweet and thick soya sauce
Black pepper
Bacon

Method:
Lay a flattened chicken breast out onto a work surface. Spoon about 3 tablespoons of the cauliflower stuffing onto the chicken breast, and top with cheese. Roll the chicken breast around the stuffing, wrap 2 slices of bacon firmly around each roll, and secure with toothpicks. Place the rolls into a baking dish and bake for 30 minutes 200degrees…Enjoy

Lemon and herb chicken

Ingredients:
Half chicken
3 tablespoons pepper
3 tablespoons dry parsley
3 tablespoons Robertson zesty lemon and herb spice
30 ml Nandos peri peri sauce
2 tablespoons olive oil
2 tablespoons lemon juice

Method:
Mix all the ingredients together and use the mixture to coat the chicken and leave it to marinade for 4 hours .
Place the under a preheated oven 200 degrees Celsius for 45 minutes…Enjoy

Tip:U can even use this marinade for braai

heat oil in asaucepan add potatoes season with salt, turmeric and cayenne pepper fry few mins add onions then tomatoes , let it simmer on low heat

Pre boil with spices of your choice the pan fry.

Pasta in spiced tomayo sauce

Boiled pasta(mixed 2 types)
Tomatoes
Onion
Garlic
Tomato puree
Cayenne pepper
Red pepper
Grated Cheese

In a saucepan heat oil add onions then tomatoes making your sauce add tomato pure ,garlic and cayenne pepper reduce heat let it simmer for few mins then add boiled pasta and cheese mix it together then serve

Ribs

Marinated with spices of your choice.used cayenne pepper,salt ,black pepper then cover with foil pepper slow cook for 2 hours or until it soft and tender then bush on any sauce of your choicei used( sriracha hot chilli sauce )put it back in oven for 3 to 5 mins

Avocado Salad

Mix together
Cucumber ,tomatoes,red onion,(radish optional) dress with a mixture of olive oil,lemon juice,salt and pepper.

CHICKEN COLESLAW WITH PINEAPPLE RECIPE

INGREDIENTS:
1 Cup of chicken breasts, cooked and shredded
1 Cup of sliced carrot
1Cup red sliced cabbage
1 Cup of normal cabbage
1/2 a cup of onion
1 Cup of shredded spinach
1/2 a cup of pineapple cut into thin strips

SAUCE INGREDIENTS:
1 cup plain double cream yogurt
Half a cup mayonnaise
1 tablespoon freshly-squeezed lemon juice
1 tablespoon honey
Half a teaspoon of ground white pepper
1/2 teaspoon ground turmeric

DIRECTIONS FOR THE SAUCE.
Fry onion together with Turmeric and set aside to cool,Then
Whisk all ingredients of the sauce in a medium bowl until combined. Add cabbage,spinach,carrot,pineapple ,White pepper and chicken to the sauce.

POTATO SALAD WITH BACON RECIPE

Ingredients:
2 cups of cooked Potatoes ,cut into quarters
2 tablespoons of wholegrain mustard
Half a cup mayonnaise
Half a cup crispy bacon,diced
Salt
3 tablespoons of Greek salad dressing
1/2 red onion ,diced.
Half a cup whole kernel corn in brine,

Method:
In a medium bowl mix the mayonnaise, Greek salad dressing,wholegrain mustard and salt , Stir until smooth.
Place the potatoes in a large bowl. Gently mix in the dressing until it coats the potatoes well. Then stir in the bacon,red onions ,corn and parsley.Enjoy

MEATBALLS RECIPE

INGREDIENTS:
500g beef mince meat
60ml cup bread crumbs
1 tablespoon parsley, chopped
1/2 teaspoon ground pepper
1/2 teaspoon ground nutmeg
1/2 cup onion, finely chopped
1/2 teaspoon Garlic Powder
1/2 teaspoon Pepper
1/2 teaspoon salt
1 egg
1 tbsp olive oil
5 tbsp butter
3 tbsp flour
1 cup heavy cream
1 Tablespoon thick and sweet sauce
1 tsp Dijon mustard

INSTRUCTIONS:
In a medium sized bowl combine ground beef, breadcrumbs,parsley, nutmeg, onion, garlic powder, pepper, salt and egg. Mix until combined..
Roll into 12 large meatballs or 20 small meatballs. In a large skillet heat olive oil and 1 Tablespoon butter. Add the meatballs and cook turning continuously until brown on each side and cooked throughout. Transfer to a plate and cover with foil.
Add 4 Tablespoons butter and flour to skillet and whisk until it turns brown. Slowly stir in liquid beef stock and heavy cream. Add thick.and sweet soy sauce and dijon mustard and bring to a simmer until sauce starts to thicken. Salt and pepper to taste.m
Add the meatballs back to the skillet and simmer for another 1-2 minutes.
