So happy I found my aunties’ old recipe. I thought it was gone forever, but it’s even better now!

This classic meatloaf gets a cheesy upgrade with the addition of shredded cheddar cheese. It’s a hearty and satisfying dish perfect for a family dinner.

Ingredients:

IngredientQuantity
Ground beef1 1/2 pounds
Ground pork1/2 pound
Cheddar cheese1 cup shredded
Breadcrumbs1 cup
Onion1 small, finely chopped
Garlic2 cloves, minced
Milk1/2 cup
Ketchup1/2 cup
Eggs2 large, lightly beaten
Worcestershire sauce1 tablespoon
Dijon mustard1 tablespoon
Salt1 teaspoon
Black pepper1/2 teaspoon
Dried thyme1/2 teaspoon
Dried oregano1/4 teaspoon
Smoked paprika1/4 teaspoon

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with aluminum foil or parchment paper.
  2. Combine ground beef, ground pork, cheddar cheese, and breadcrumbs in a large bowl.
  3. Add onion, garlic, milk, ketchup, eggs, Worcestershire sauce, Dijon mustard, salt, pepper, thyme, oregano, and smoked paprika to the bowl. Mix well with your hands.
  4. Shape the meat mixture into a loaf on the prepared baking sheet.
  5. Bake for about 1 hour, or until cooked through (internal temperature of 160°F/70°C).
  6. Let rest for 10 minutes before slicing and serving.

Here are some cheese combinations you might enjoy for your meatloaf:

  1. Cheddar and Mozzarella: This classic combo gives you a sharp flavor from the cheddar and a gooey texture from the mozzarella.
  2. Pepper Jack and Monterey Jack: If you like a bit of spice, pepper jack adds a nice kick while Monterey Jack keeps it creamy.
  3. Swiss and Gruyère: For a more gourmet touch, this combination brings a nutty flavor and smooth texture.
  4. Feta and Spinach: If you want to incorporate some veggies, adding feta with cooked spinach can give your meatloaf a Mediterranean twist.
  5. Blue Cheese and Cream Cheese: For something bold, blue cheese adds a strong flavor, while cream cheese helps to mellow it out and keep the meatloaf moist.

Feel free to mix and match based on your taste preferences!
