  • Seasonings: Salt, pepper, garlic powder, and thyme to taste.
  • Dumplings: 1 can of refrigerated biscuit dough or homemade dumpling dough.

Instructions:

  1. Prepare the Chicken: Place the chicken breasts in the bottom of the crock pot.
  2. Add Vegetables and Soup: Layer the sliced carrots, chopped celery, and diced onion over the chicken. Pour the cream of chicken soup and chicken broth on top. Season with salt, pepper, garlic powder, and thyme.
  3. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is fully cooked and tender.
  4. Shred Chicken: About 30 minutes before serving, remove the chicken, shred it with two forks, and return it to the crock pot.
  5. Add Dumplings: Cut the biscuit dough into quarters and drop them into the crock pot. Cover and cook for an additional 30 minutes on high until the dumplings are cooked through.
  6. Serve: Once the dumplings are fluffy and cooked, stir everything together and serve hot.
