This Pecan Pie Cobbler offers the rich, buttery, and nutty flavors of pecan pie in an easy-to-make cobbler form. The self-rising flour creates a delightful, slightly cakey topping that bakes over the gooey pecan filling. It’s a comforting and satisfying dessert that’s perfect warm with a scoop of ice cream.

Ingredients:

IngredientQuantity
Unsalted butter6 tablespoons
Pecans (roughly chopped)1 1/2 cups
Self-rising flour1 1/2 cups
Granulated sugar1 1/2 cups
Whole milk2/3 cup
Vanilla extract1 teaspoon
Brown sugar (packed)1 1/2 cups
Hot water1 1/2 cups

Instructions:

  1. Preheat oven and melt butter: Preheat your oven to 350ºF (175°C). Place the 6 tablespoons of unsalted butter in a 9×13-inch baking dish. Place the baking dish in the preheated oven to allow the butter to melt completely.
  2. Add pecans: Once the butter is melted, remove the baking dish from the oven and sprinkle the roughly chopped pecans evenly over the melted butter. Set the baking dish aside.
  3. Prepare the batter: In a large mixing bowl, whisk together the self-rising flour, granulated sugar, whole milk, and vanilla extract until the mixture comes together and is relatively smooth. Be careful not to overmix.
  4. Pour batter over pecans: Gently pour the prepared batter evenly over the pecans in the baking dish. Do not stir the pecans into the batter once it’s poured into the dish; they should remain at the bottom.
  5. Add brown sugar and hot water: Sprinkle the packed brown sugar evenly over the top of the batter. Do not mix the brown sugar into the batter. Carefully pour the hot water evenly over the layer of brown sugar. Again, do not stir.
  6. Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the cake topping is golden brown and the filling is bubbly.
  7. Cool and serve: Remove the Pecan Pie Cobbler from the oven and let it cool for at least 15 minutes before serving. The filling will thicken as it cools. Serve warm, and consider topping it with vanilla ice cream or whipped cream for an extra treat. Enjoy!
