Stuffed Pepper Soup Recipe

Stuffed pepper soup is a hearty, comforting dish that captures all the flavors of classic stuffed peppers—but in soup form. It typically includes:

  • Bell peppers (usually green, red, or a mix), chopped
  • Ground beef or sausage
  • Rice (either white or brown)
  • Onions and garlic
  • Tomato base (diced tomatoes, tomato sauce, or both)
  • Broth (usually beef or chicken)
  • Seasonings like salt, pepper, oregano, and basil

Here’s a classic Stuffed Pepper Soup recipe that’s super easy and flavorful:

Ingredients:

  • 1 lb ground beef (or turkey)
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 3 bell peppers (mix of green, red, or yellow), chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 4 cups beef broth (or chicken/vegetable broth)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt & pepper to taste
  • 1 cup cooked rice (white or brown)
  • Optional toppings: shredded cheese, chopped parsley

Instructions:

  1. Cook the meat:
    In a large pot, brown the ground beef over medium heat. Drain excess grease if needed.
  2. Add veggies:
    Add onion, bell peppers, and garlic. Cook for 4–5 minutes until softened.
  3. Add tomatoes and broth:
    Stir in diced tomatoes, tomato sauce, broth, and seasonings. Bring to a boil.
  4. Simmer:
    Reduce heat and simmer uncovered for 20–25 minutes, until peppers are tender.
  5. Add rice:
    Stir in cooked rice and heat for another 5 minutes. (Add more broth if it’s too thick.)
  6. Serve:
    Ladle into bowls, top with cheese or parsley if you like, and enjoy!
