This Easy Taco Lasagna is a fantastic blend of two family favorites, combining the savory spices of tacos with the comforting layers of lasagna. It’s a simple, hearty dish that’s perfect for a satisfying weeknight meal with minimal fuss.

Instructions:

  1. Preheat Oven & Prep Dish: Begin by preheating your oven to 375°F (190°C). Lightly grease a standard 9×13-inch baking dish.
  2. Brown Beef & Sauté Aromatics: Using a spacious skillet, brown the ground beef over medium-high heat. Once cooked through, drain any excess fat and set the beef aside. In the same skillet, add the olive oil and sauté the finely chopped red onion until translucent. Introduce the minced garlic, cooking for another minute until fragrant.
  3. Combine Beef Mixture: Return the browned beef to the skillet. Blend in the taco seasoninggreen chiles (if using), and drained black beans. Add ½ cup water and let the mixture simmer gently. If it appears too thick, stir in an additional 1-2 tablespoons of water as needed to reach a desired consistency.
  4. Assemble the Lasagna:
    • Start by laying a single layer of flour tortillas on the bottom of the prepared baking dish, overlapping slightly if necessary to cover the bottom.
    • Over this, spread a portion of the salsa.
    • Follow with half of the prepared beef mixture.
    • Evenly dollop half of the sour cream over the beef, spreading it gently.
    • Sprinkle generously with shredded Mexican Cheese Blend.
    • Repeat the layering process: another layer of tortillas, the remaining salsa, the second half of the beef mixture, the remaining sour cream, and a generous sprinkle of cheese.
    • Finish with a final layer of tortillas, the remaining salsa, and a generous amount of cheese on top.
  5. Bake: Bake the lasagna in the preheated oven until the cheese is bubbly and turns a golden hue, typically between 30-40 minutes.
