Layer Potatoes and Meatballs It’s a casserole dish with layers of ground beef meatballs, cream of mushroom soup, spinach, onion, and potato slices. It’s a hearty and comforting dish, perfect for a family dinner.
You’ll need:
- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon olive oil
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup milk
- 1/2 cup shredded mozzarella cheese
- 1/2 cup chopped onion
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (16 ounce) package refrigerated thin sliced potatoes
Instructions:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine ground beef, bread crumbs, Parmesan cheese, egg, salt, and pepper. Mix well and shape into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Brown meatballs on all sides.
- In a medium bowl, combine cream of mushroom soup, milk, and mozzarella cheese. Stir until smooth.
- Spread 1/2 cup of the soup mixture in the bottom of a 9×13 inch baking dish.
- Top with half of the meatballs, half of the onion, and half of the spinach.
- Repeat layers with remaining soup mixture, meatballs, onion, and spinach.
- Arrange potato slices on top of the spinach layer, overlapping slightly.
- Bake in preheated oven for 30 minutes, or until potatoes are tender and golden brown.
