Layer Potatoes and Meatballs

Layer Potatoes and Meatballs It’s a casserole dish with layers of ground beef meatballs, cream of mushroom soup, spinach, onion, and potato slices. It’s a hearty and comforting dish, perfect for a family dinner.

You’ll need:

  • 1 pound ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (16 ounce) package refrigerated thin sliced potatoes

Instructions:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large bowl, combine ground beef, bread crumbs, Parmesan cheese, egg, salt, and pepper. Mix well and shape into 1-inch meatballs.
  3. Heat olive oil in a large skillet over medium heat. Brown meatballs on all sides.
  4. In a medium bowl, combine cream of mushroom soup, milk, and mozzarella cheese. Stir until smooth.
  5. Spread 1/2 cup of the soup mixture in the bottom of a 9×13 inch baking dish.
  6. Top with half of the meatballs, half of the onion, and half of the spinach.
  7. Repeat layers with remaining soup mixture, meatballs, onion, and spinach.
  8. Arrange potato slices on top of the spinach layer, overlapping slightly.
  9. Bake in preheated oven for 30 minutes, or until potatoes are tender and golden brown.
