Pumpkin pecan cobbler is a delightful autumn dessert that combines the warm flavors of pumpkin, cinnamon, and nutmeg with the crunchy goodness of pecans. This indulgent treat is perfect for cozy evenings with family and friends, and it’s sure to become a favorite in your dessert repertoire.

Ingredients:

For the Cobbler:

Melted butter or vegetable oil1/4 cup
Vanilla1 1/2 teaspoons

For the Topping:

Brown sugar1/2 cup
Chopped pecans1/4 cup
Very hot water1 1/2 cups

Instructions:

Preheat the Oven:

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.

Prepare the Cobbler Batter:

  1. In a large bowl, whisk together the flour, baking powder, salt, sugar, cinnamon, nutmeg, and cloves until well combined.
  2. In a separate bowl, mix together the pumpkin puree, milk, melted butter or oil, and vanilla until smooth.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

Spread the Batter:

  1. Spread the cobbler batter evenly into the prepared baking dish, smoothing the top with a spatula.

Make the Topping:

  1. In a small bowl, mix together the granulated sugar, brown sugar, and chopped pecans.
  2. Sprinkle the topping mixture evenly over the cobbler batter in the baking dish.

Add Hot Water:

  1. Carefully pour the very hot water over the top of the cobbler batter and topping. Do not stir.

Bake and Serve:

  1. Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the cobbler is golden brown and bubbly.
  2. Remove from the oven and let cool slightly before serving.
