Ingredients:
- 1.5 pounds beef chuck roast, cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (14.5 ounce) can beef broth
- 1/2 cup dry red wine
- 1/4 cup tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/2 cup chopped fresh parsley
- 1/4 cup red wine vinegar
Instructions:
- Sauté the beef: Turn the Instant Pot to the Sauté setting and heat the olive oil. Brown the beef cubes on all sides. Remove the beef from the pot and set aside.
- Sauté the aromatics: Add the onion and garlic to the pot and sauté until softened, about 5 minutes.
