Instant Pot Greek Beef Stifado Recipe

Instant Pot Greek Beef Stifado is a rich and aromatic stew made with tender beef, pearl onions, and a spiced tomato-based sauce. The dish is known for its deep, slightly sweet, and tangy flavors, thanks to ingredients like red wine, red wine vinegar, cinnamon, and cloves. Traditionally slow-cooked, using an Instant Pot significantly reduces the cooking time while still allowing the flavors to meld beautifully.

Here’s a recipe for Instant Pot Greek Beef Stifado:

Ingredients:

  • 1.5 pounds beef chuck roast, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 (14.5 ounce) can beef broth
  • 1/2 cup dry red wine
  • 1/4 cup tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/2 cup chopped fresh parsley
  • 1/4 cup red wine vinegar

Instructions:

  1. Sauté the beef: Turn the Instant Pot to the Sauté setting and heat the olive oil. Brown the beef cubes on all sides. Remove the beef from the pot and set aside.
  2. Sauté the aromatics: Add the onion and garlic to the pot and sauté until softened, about 5 minutes.
  3. Add remaining ingredients: Return the beef to the pot. Add the diced tomatoes, beef broth, red wine, tomato paste, oregano, salt, pepper, cinnamon, and cloves. Stir to combine.
  4. Pressure cook: Close the Instant Pot lid and set the valve to seal. Cook on high pressure for 60 minutes.
  5. Natural pressure release: Allow the pressure to release naturally for 10 minutes. Then, manually release the remaining pressure.
  6. Stir in parsley and vinegar: Stir in the chopped parsley and red wine vinegar.
  7. Serve: Serve hot over rice or crusty bread.
