Hearty Homemade Goulash Soup with Elbow Macaroni

There’s nothing quite as comforting as a steaming bowl of homemade goulash soup. This hearty recipe combines tender ground beef, fresh vegetables, juicy tomatoes, and elbow macaroni all simmered together in a flavorful broth. The result is a rich, filling, and family-friendly dish that’s perfect for weeknight dinners or cozy weekends at home.

Unlike traditional Hungarian goulash, this American-style version leans more toward a comforting soup, with pasta and veggies that make it a complete meal in one pot. It’s affordable, easy to prepare, and a dish that both kids and adults will enjoy.

Ingredients

1 lb (450g) ground beef (or substitute with ground turkey or chicken)

1 medium onion, diced

2 medium carrots, sliced

2 celery stalks, diced

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 can (8 oz) tomato sauce

6 cups beef broth (or chicken broth)

1 cup elbow macaroni, uncooked

1 cup frozen corn (optional, for sweetness and texture)

1 tsp Italian seasoning

1 tsp smoked paprika

½ tsp chili flakes (optional, for heat)

Salt and black pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped, for garnish

Instructions

  1. Brown the Beef
Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if necessary.
  2. Add Aromatics
Stir in the onion, garlic, carrots, and celery. Cook for 5–6 minutes until the vegetables soften and release their flavors.
  3. Incorporate Tomatoes
Add the diced tomatoes and tomato sauce. Mix well so the beef and vegetables absorb the tomato base.
  4. Season and Simmer
Pour in the beef broth, then add Italian seasoning, smoked paprika, chili flakes, salt, and black pepper. Stir to combine. Bring to a boil, then reduce heat to low and let it simmer for 20–25 minutes so the flavors meld together.
  5. Cook the Pasta
Add the uncooked elbow macaroni and frozen corn to the soup. Cook for another 10 minutes, or until the pasta is tender but not mushy.
  6. Finish and Serve
Taste and adjust seasonings as needed. Serve hot, garnished with freshly chopped parsley for a pop of color and freshness.

Tips & Variations

Make it vegetarian: Skip the beef and use vegetable broth with extra beans or lentils.

Cheesy twist: Add shredded cheddar or Parmesan right before serving for a creamy, cheesy flavor.

Spicy kick: Toss in extra chili flakes or a diced jalapeño if you like heat.

Meal prep friendly: This soup stores well in the fridge for up to 4 days. Just add a little broth or water when reheating, as pasta tends to soak up liquid.

Serving Suggestions

This goulash soup is hearty enough on its own, but it pairs wonderfully with:

A side of crusty bread or garlic toast.

A simple green salad for balance.

Pickles on the side, for a tangy contrast.

Whether you’re serving this on a chilly evening, making a batch for family gatherings, or meal-prepping lunches for the week, this recipe never fails to deliver.
