It’s simple to prepare and bursting with bold, savory flavors!

Ingredients:

4 Italian sausages (sweet or hot, depending on preference)

1 tablespoon olive oil

1 medium yellow onion, sliced

1 green bell pepper, sliced

1 orange or red bell pepper, sliced

2 cloves garlic, minced

Salt and black pepper to taste

½ teaspoon Italian seasoning

¼ cup chopped fresh parsley (optional for garnish)

4 hoagie rolls or sandwich buns, sliced

Optional: provolone or mozzarella cheese slices

Instructions:

  1. Grill or Pan-Cook the Sausages:

Heat a grill or skillet over medium heat. Place the sausages on the grill and cook for about 12–15 minutes, turning occasionally, until they are evenly browned and cooked through. Internal temperature should reach 160°F (71°C).

Tip: If using a skillet, you can add a splash of water and cover with a lid to steam them slightly and keep them juicy.

  1. Sauté the Peppers and Onions:

In a large skillet, heat the olive oil over medium-high heat. Add sliced onions and bell peppers. Sauté for 6–8 minutes until they begin to soften. Add minced garlic, Italian seasoning, salt, and pepper, and cook for another 2–3 minutes until fragrant and lightly caramelized.

  1. Toast the Buns:

Cut the sandwich buns or hoagie rolls in half and lightly toast them on the grill or in a toaster oven. This step adds a bit of crunch and keeps the bun from getting soggy.

  1. Assemble the Sandwiches:

Place a generous amount of the sautéed peppers and onions into each bun. Top with a grilled sausage. Add cheese if desired, and sprinkle with fresh parsley for a touch of color and freshness.

Serving Suggestions:

Serve these sandwiches with a side of potato wedges, coleslaw, or a simple garden salad. They also pair perfectly with cold drinks on a warm day.

Storage Tips:

Leftover sausages and peppers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.
