Cheesy Beef-Stuffed Folded Tortillas

These golden, crispy, cheesy beef-stuffed folded tortillas are the ultimate comfort food! Made with seasoned ground beef, melted cheese, and soft tortillas folded into pockets, they’re baked to perfection. A delicious, family-friendly recipe that’s perfect for dinner or a party appetizer.

Ingredients:

1 lb (450g) ground beef

1 small onion, finely chopped

2 garlic cloves, minced

1 tsp paprika

1/2 tsp cumin

1/2 tsp chili powder (optional)

Salt & pepper to taste

1/2 cup tomato sauce or salsa

2 cups shredded cheese (cheddar, mozzarella, or a mix)

6 large flour tortillas

Fresh parsley or cilantro for garnish (optional)

Olive oil or melted butter (for brushing)


Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
  2. Cook the beef:
    In a skillet over medium heat, add a little oil and sauté the chopped onion until soft. Add the garlic and cook for another 30 seconds. Add the ground beef and cook until browned. Drain excess fat if necessary.
  3. Season:
    Stir in paprika, cumin, chili powder, salt, and pepper. Add tomato sauce or salsa and simmer for 5 minutes. Remove from heat.
  4. Assemble the tortillas:
    Place a tortilla on a flat surface. Spoon a generous amount of the beef mixture in the center, top with shredded cheese, and fold each side over to form a square pocket.
  5. Arrange and top:
    Place each folded tortilla seam-side down in the prepared baking dish. Brush the tops lightly with olive oil or melted butter.
  6. Bake:
    Bake for 18–22 minutes or until the tops are golden brown and the cheese is bubbling out slightly.
  7. Garnish and serve:
    Sprinkle with chopped parsley or cilantro. Serve warm with sour cream, guacamole, or salsa on the side.

Tips:

Want to spice it up? Add jalapeños or crushed red pepper to the beef.

You can make them ahead and freeze—just bake when ready!
