Tapioca pudding

Tapioca pudding is a classic dessert that’s both creamy and comforting! Here’s a simple recipe for you to try:

Ingredients:

  • 1/2 cup small tapioca pearls
  • 2 cups milk (you can use almond milk or another alternative for a healthier option)
  • 1/2 cup sugar (you can adjust this or use a sugar substitute for lower sugar)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs (optional, for a richer pudding)

Instructions:

  1. Soak the tapioca: In a bowl, soak the tapioca pearls in water for about 30 minutes. Drain and set aside.
  2. Heat the milk: In a saucepan over medium heat, combine the milk, sugar, and salt. Stir occasionally until the mixture is warm but not boiling.
  3. Add tapioca: Stir in the soaked tapioca pearls and continue to cook over medium heat, stirring frequently. Cook for about 15-20 minutes, or until the tapioca becomes translucent and the mixture thickens.
  4. Incorporate eggs (if using): If you’re using eggs, beat them in a separate bowl. Gradually add a few spoonfuls of the warm tapioca mixture into the eggs to temper them. Then, stir the egg mixture back into the saucepan. Cook for an additional 2-3 minutes until thickened.
  5. Add vanilla: Remove from heat and stir in the vanilla extract.
  6. Cool and serve: Pour the pudding into serving dishes and let it cool. You can serve it warm or chilled, topped with fresh fruit or a sprinkle of cinnamon if desired.
