Sweet potato pie is a dessert pie with a filling made from mashed sweet potatoes, sugar, spices, and often eggs and butter. It’s a popular dish, especially during the fall and winter holidays.
Ingredients:
- For the crust:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, chilled and cut into small pieces
- 1/4 cup ice water
- For the filling:
- 3 medium sweet potatoes, peeled and cubed
- 1/2 cup (1 stick) unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup granulated sugar
- 2 large eggs
- 1 cup heavy cream
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
Instructions:
- Make the crust:
- In a large bowl, whisk together flour and salt.
- Cut in butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
- Gradually add ice water, mixing until dough just comes together.
- Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Prepare the filling:
- Preheat oven to 350 degrees F (175 degrees C).
- Boil sweet potatoes in water until tender, about 20 minutes. Drain and mash.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in heavy cream.
- Add mashed sweet potatoes, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
- Assemble the pie:
- Roll out chilled dough on a lightly floured surface to a 12-inch circle.
- Transfer to a 9-inch pie plate. Trim edges and crimp.
- Pour filling into crust.
- Bake:
- Bake for 45-50 minutes, or until filling is set and crust is golden brown.
- Let cool completely before serving.
