Sweet Potato Pie

Sweet potato pie is a dessert pie with a filling made from mashed sweet potatoes, sugar, spices, and often eggs and butter. It’s a popular dish, especially during the fall and winter holidays.

Ingredients:

  • For the crust:
    • 1 1/2 cups all-purpose flour
    • 1/2 teaspoon salt
    • 1/2 cup (1 stick) unsalted butter, chilled and cut into small pieces
    • 1/4 cup ice water
  • For the filling:
    • 3 medium sweet potatoes, peeled and cubed
    • 1/2 cup (1 stick) unsalted butter
    • 1 cup packed light brown sugar
    • 1/4 cup granulated sugar
    • 2 large eggs
    • 1 cup heavy cream
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon ground nutmeg
    • 1/4 teaspoon ground ginger
    • 1/4 teaspoon salt

Instructions:

  1. Make the crust:
    • In a large bowl, whisk together flour and salt.
    • Cut in butter using a pastry blender or your fingers until mixture resembles coarse crumbs.
    • Gradually add ice water, mixing until dough just comes together.
    • Shape into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the filling:
    • Preheat oven to 350 degrees F (175 degrees C).
    • Boil sweet potatoes in water until tender, about 20 minutes. Drain and mash.
    • In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
    • Beat in eggs one at a time, then stir in heavy cream.
    • Add mashed sweet potatoes, cinnamon, nutmeg, ginger, and salt. Mix until well combined.
  3. Assemble the pie:
    • Roll out chilled dough on a lightly floured surface to a 12-inch circle.
    • Transfer to a 9-inch pie plate. Trim edges and crimp.
    • Pour filling into crust.
  4. Bake:
    • Bake for 45-50 minutes, or until filling is set and crust is golden brown.
    • Let cool completely before serving.
