VEGETABLE FRIED RICE

Ingredients 
2 cups rice
3 eggs fried and cut into pieces
1 chicken oxo cube
1 beef oxo cube 
11/2 cups mixed vegetables (of your choice)
Cooking oil
Salt to taste

Method
1) For a good fried rice, cook rice the night before. (Optional)
2) In a big wok/pot heat 2 tablespoons cooking oil (l used coconut oil) add the vegetables and stir fry for 5 minutes, add both chicken cube and beef cube, mix thoroughly. Add rice and mix thoroughly, add a bit of salt bearing in mind that the oxo cubes are salty. Lastly add the eggs, mix thoroughly and the vegetable fried rice is done.
