BASIC SPONGE CAKE

Ingridients
125g bakin margarine
250ml white sugar
3 extra large eggs
5ml vanilla essence
500ml cake flour
150ml milk
15ml bakin powder
1/2 t salt

DIRECTIONS
1. Preheat oven to 180. Grease nd linr0e 2 × 20cm bakin tins
2. Cream margarine nd sugar together until light nd creamy. Add vanilla essence
3. Add eggs 1 at a time beating well after each addition
4. Sift flour, bakin powder together
5. Fold into the creamed mixture, alternately wth da milk.
6. Spoon mixture into da prepzred cake tins nd bake fr 20 to 25 minutes until golden brown or scewer inserted cums out clean.
7. Leave in pans fr few mintes b4 turning out to a wire rack to cool completely.

DIKUKU..!

Recipe:
12 cups flour
12 teaspoons baking powder
500g cold butter or margarine
2 cups sugar
1 tablespoon vanilla or caramel essence
1teaspoon salt
300ml vanilla custard(ultramel or any other brand)
100ml inkomazi(sour milk)
6 eggs
1 or 2 cups raisins( baker mix)
Method:
Sift all the dry ingrendients into a mixing bowl, add ur butter then mix till it resembles bread crumbs, add ur raisins and mix well. Add beaten eggs and vanilla then add ur vanilla custard and inkomazi then mix well.i used a drinking glass to cut out the shape. Brush with egg wash( egg mixed with a bit of milk or water or caramel essence). Bake at 180 till it is golden brown. NB: pre heat oven for about 30minutes before baking😉. For the shiny glaze: i mix 1tablespoons apricot jam with 1/4 cup warm water and brush ur scones as soon as they come out of the oven.😘happy baking!

INGREDIENTS 
CHICKEN BREAST OR CHICKEN THIGH 
CARROTS 
GREEN BEANS 
ROBOT PEPPERS 
ONION 
GARLIC 
SWEET AND SOUR SAUCE 
OIL
SALT AND PEPPER 
FIVE SPICES

METHOD:
CUT YOUR CHICKEN INTO STRIPS AND FRY TILL COOKED THEN WASH ALL YOUR VEGGIES.
JULIENNE YOUR VEGGIES IN A PAN ADD OIL AND LET HEAT UP THEN ADD YOUR ONION AND GARLIC LET IT FRY THEN ADD YOUR VEGGIES ADD YOUR SPICES SWEET AND SOUR SAUCE SAUCE THEN ADD YOUR CHICKEN STIR AND LET COOK FOR 1 MINUTE OR 2 MINUTES. BUT MAKE SURE YOUR VEGGIES ARE NOT OVER COOKED THEY MUST HAVE THAT CRUSH. YOU CAN SERVE IT WITH MACARONI, SPAGETTI OR RICE.

CHOCOLATE BROWNIES

INGREDIENTS 
250g butter, melted
1/2 cup brown sugar 
2 eggs, beaten
1/2 cup unsweetened cocoa powder 
1/2 cup dark chocolate chips
1 cup flour
1/2 teaspoon baking powder 
1/4 cup milk

METHOD 
Preheat the oven at 180 degrees.
Grease and line a baking dish with parchment paper.
In a bowl whisk the eggs until soft and fluffy. Add the melted butter and sugar. Whisk until the sugar is melted.
Add all the dry ingredients and continue mixing.
Add milk to soften the batter.
Pour the batter into a greased baking tray and bake in the oven for 15-20 minutes until the brownie is soft and springy when touched.
Cooking time will depend on the size of the tray.
Remove from the oven and leave it to cool before cutting into squares with a sharp knife.
Serve warm.

CHICKEN STRIPS.. ONION RINGS( NOT PERFECT)

INGREDIENTS

* 4 large boneless skinless chicken breasts cut into thick strips
* 2 cups all purpose flour 
* 1 tsp salt
* 1 tsp paprika
* 1Chicken spice
* 2 eggs beaten with 3 tbsp water
* cooking oil for frying

*. Heat oil it over medium-high heat while you preparw the chicken.
* In a large bowl, mix the flour, salt, chicken spice and paprika . 
* In another large bowl, beat the egg and water 
* Put the chicken in the flour, coating well. *Shake off excess flour and dip in the egg, the back in the flour.

PANCAKES


2 cups cake flour
250 ml milk
8 spoons sugar
2 eggs
Half teaspoon salt 
30 ml oil
2 spoon baking powder 
Tspoon ground cinnamon

Mix all the dry ingredients together. Mix milk, oil, eggs together. Slowly pour the milk mixture into the dry ingredients and stir. Mix well. Let it rest for about 10 minutes while u wash your dishes. 
Heat your stove and put it on 4. If it’s too hot they will burn, if it’s too low they will suck up all the oil. Put your frying pan on the stove till it’s hot. For each pancake I put a teaspoon or oil and half a teaspoon of margarine on the pan till it melts. Then poor the mixture slowly at the centre of your pan. Let it spread out on its own. Give it about 30 to 40 seconds or till its golden brown at the bottom and flip over. Do the same on the other side. 
Enjoy for me as well.

CHICKEN CURRY WITH CARROT AND TURNIP GREENS

INGREDIENTS 


3 tablespoons cooking oil 
1 large onion, chopped 
2 large carrots, roughly chopped 
1 large green pepper, roughly chopped 
1 tablespoon finely chopped garlic 
1 tablespoon curry powder
1 teaspoon cumin
1/2 teaspoon smoked paprika 
1/2 teaspoon turmeric powder 
1/2 teaspoon ground ginger
1 teaspoon dry rosemary 
1 tablespoon Portuguese chicken spice 
1.5 kg chicken pieces 
3 large tomatoes, chopped
2 cups turnip greens
1 tablespoon chopped coriander 

METHOD 
In a large pot, heat the oil. Add the chopped onions, carrot and peppers. Fry until until onions are translucent.
Add the garlic and all the spices. Fry for a minute but don’t burn the garlic. 
Add the chicken spices and stir to coat the pieces with the spice mix.
Cook for two to three minutes before adding the chopped tomatoes. Season with chicken spice, pepper and rosemary.
Close the lid and simmer on low heat for 20-25 minutes until the chicken is cooked through. 
Add the turnip greens. Let the curry simmer for another 2 -3 minutes until the sauce has thickened.
Garnish with chopped coriander and some turnip greens before serving.

CHOCOLATE MILK SHAKE


INGREDIENTS 
3 scoops of chocolate ice cream 
60ml milk 
Whipped cream 
Chocolate melted

METHOD 
In a blender add your 3 scoops of chocolate ice cream and milk blend till well mixed then pour to your milk shake glass then pipe whipped cream on top then drizzle your chocolate sauce.

BANANA milk shake

INGREDIENTS 
1 banana peeled and chopped 
3 scoops of vanilla ice cream 
60ml milk 
A piece of banana to garnish 
Whipped cream

METHOD 
In a blender add your banana, ice cream and milk blend till smooth then pour to your milk shake pipe your whipped cream and garnish with a piece of banana.

Strawberry milk shake 
INGREDIENTS 
3 scoops of vanilla ice cream 
4 washed and chopped strawberries
60ml milk 
Whipped cream 
1 strawberry to garnish

METHOD 
In a blender add your ice cream, milk and strawberries then blend till well mixed then pour milk shake to your milkshake glass pipe your whipped cream and garnish with strawberry

Caramel milk shake 
3 scoops vanilla ice cream 
2 tablespoon homemade caramel sauce or store bought 
Whipped cream 
And caramel sauce 
60ml milk

METHOD 
In a blender add your ice cream , milk and caramel sauce blend till well mixed then pour to your milk shake glass and drizzle caramel sauce.

For caramel sauce 
INGREDIENTS 
125ml sugar 
125ml cream at room temperature 
60ML butter at room temperature

METHOD 
On a low heat melt your sugar don’t stir it let it melt till dark in colour then add your butter then stir till your butter is melted then add your cream and stir till well mixed switch off your stove and let it cool and it’s ready to use.
