My apologies for taking so long to post the recipe.
The truth is I had no idea where the hell I’d written it. I keep multiple food journals thank God I found it.

These amagwinya are inspired by #Kwayishe my mom. She used to make for me and my siblings when we were young. She was a working mom and hardly had time to make the yeasted ones. These therefore bring such fond memories of my mom and me in the kitchen learning from her.

These days though she’s amazed at what I can do with food and always wants to learn from me. It is the weirdest thing. Anway she hardly ever tries my recipes becoz of being the busiest73yearold I know.

She’s still a working mom at 73 years old! Running a business and my No.1 rolemodel nakundixolela zinkosi! & love this woman to bits

Ingredients
4 C Cups Flour
6 Tsp Baking Powder
1 Teaspoon Salt
5 Tbs Sugar
1 1/2 Cups Lukewarm Water
Method

  1. Preheat a deep pot with any vegetable oil such sunflower, canola, peanut, grapeseed oil etc in medium heat.
  2. While the oil is heating up in a big bowl mix all the ingredients into a dough.
  3. On a lightly floured surface shape the dough into a thick disc then cut with a cookie cutter into even rounds. You can also shape into even balls with floured hands.
  4. Fry in heated oil until the one side is golden brown & the other looks cooked even though still pale then turn and fry the other side to an even golden brown colour.
  5. When cooked place on a large bowl lined with paper towel. Cool slightly and serve with sweet tea or coffee. At the farm where I grew up, we enjoyed them as they are or with #igxogxa aka #repurposedtea from used teabags or already brewed coffee granules. Kids were not allowed to drink real coffee and tea but hey as kids! We loved igxogxa. Its the closest to coffee and tea we could get.

Banana loaf recipe

Ingredients
4 cups of flour
4 teaspoons baking powder
Pinch of salt
4 overripe bananas
1/2 brown sugar
1/2 cup melted Butter
Cup of milk
2 eggs
1 teaspoon vanilla and 1 teaspoon of banana flavor

Method
1.Preheat your oven to 180°C.
2.Prepare your loaf tins
3.Mix your dry ingredients together
4.Mash your bananas with sugar,add your melted butter,eggs one at a time and your flavours.

  1. Add the milk
  2. Add the dry ingredients into the wet ingredients.
  3. Pour into separate baking tinsel.
  4. Bake for 40-50 minutes or until stick inserted comes out clean.

I used different sizes so they didn’t bake at the same time.
This batter will make two loaves.

MOGODU(TRIPE)RECIPE

Ingredients:.
1kg tripe (beef)
water
1 onion, chopped
2 tablespoons ground black pepper
3 tablespoons of paprika
salt

Instructions:
Wash and cut your tripe into pieces,Cover tripe with water, bring to the boil and simmer for three hours.
Add onion, , pepper, salt and paprika to taste.
Add more water Simmer for a further 30 minutes until it is are cooked through.

KFC ORIGINAL SECRET CHICKEN RECIPE

Ingredients
1 whole chicken, cut into pieces
3 beaten eggs
4 tablespoons oil

For the coating
2 cups flour
4 teaspoons paprika
1 teaspoons salt
1 teaspoon pepper
1 teaspoon poultry seasoning (or chicken stock powder)
1 teaspoon oregano
1 teaspoon tarragon
1 teaspoon parsley
1/2 teaspoon thyme
1 teaspoon chives
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery salt

Directions:
Sift flour and add together all the coating ingredients and grind finely with a mortar and pestle and place in a clean plastic bag. Coat each chicken piece first with the beaten egg, then with the flour mixture in the bag. Make sure you coat each piece completely with the flour.
Heat the oil in a skillet. Brown the chicken in oil slowly, uncovered. Once browned, cover the skillet and keeping frying on a very gentle heat until the chicken is fully cooked. Place on paper towels to drain out the excess.

Orange Ogura Cake Recipe

Ingredients:

  • Orange juice- 70 gm
  • Vegetable oil- 40 gm
  • Salt- ¼ table-spoon
  • Plain flour or Cake flour- 55 gm
  • Zest from 2 oranges
  • Egg yolks-4 + whole egg-1 (60 gm each)
  • Egg white- 150 gm
  • Cream of tartar- ¼ tsp
  • Sugar- 60 gm

Method:

First of all Preheat the oven to 160 deg C with a tray of boiling water on the most bottom rack.

Line baking sheet at the bottom of an ungreased 7 inch square pan.

Whisk egg yolks,and vegetable oil until frothy and add orange juice, mix well.

Sift in flour, salt and orange zest, mix well set aside.

Using an electric mixer, whisk egg white, cream of tartar until foamy.

Gradually add castor sugar till peak form (not stiff).

Mix ⅓ of meringue with yolk batter with a rubber spatula.

Then pour in remaining meringue. Fold gently to mix well.

Pour batter into pan and tap pan lightly to remove air bubbles.

Steam bake for 40 minutes at 160°C and bake for another 20 minutes at lower temperature 140°C.

Remove cake immediately after baked and invert cake on wire rack to cool.

How to Make Easy Cheesecake Cupcakes

Ingredients:

  • Cups flour, sifted- 1 3/4 
  • Baking powder- 2 teaspoons 
  • Teaspoon salt- 1/4 
  • Butter, softened- 1/2 cup 
  • Sugar- 1/2 cup
  • Eggs- 2 
  • Sweetened condensed milk- 1 can (14 ounces) 
  • Quick-melt cheese, shredded- 1/2 cup 
  • Cheddar cheese, shredded- 1 cup 

Method

First of all to make cheesecake cupcakes, Line muffin pan with cupcake liners.

and now take a large bowl, combine flour, baking powder, and salt.

In a medium bowl, beat butter, sugar, and eggs with an electric mixer until combined.

Beginning and ending with flour mixture, add flour mixture in thirds and 1/2 of sweetened condensed milk in between (1/3 flour mixture, 1/2 condensed milk, 1/3 flour mixture, 1/2 condensed milk and 1/3 flour mixture) to egg mixture. Beat at low speed with every addition.

Add quick-melt cheese and stir to combine.

Using a scoop or spoon, fill each muffin hole up to 3/4 full. Top with cheddar cheese.

Bake in a 350 F oven for about 20 to 25 minutes or until a toothpick inserted comes out clean and top is golden. Remove from oven and allow to cool.
