Hake fillets and mashed Potatoes


Ingredients
1egg
1/4 cup milk
1/2 cup flour
1 tspn spice for fish
1cup canola oil

Method
Beat egg…Stir in milk.
On another bowl mix flour and spice.
Dip fish fillets in egg mixture; dip in flour to coat.
Heat oil….Add fish; dip fry for 5min or until golden brown.

FriedChicken Kentucky ICook

Drumsticks
Ingredients:
2 beaten eggs
1/2 cup milk
1 tspn Paprika
2 tblspn chicken spice
4 tblspn bread crumbs
1/2 cup flour

Directions
Beat the egg and milk together in a bowl.
Combine all the dry ingredients
Put the chicken in the bag, seal it and shake to coat it.
Dip the flour-coated chicken in the egg mixture and again in the flour mixture.
Heat the oil…..Brown the chicken on all sides in the hot oil.
Turn the heat down to medium low and give the chicken another half an hour or until it is cooked through.
Drain it on paper towels and serve.

Samp

Creamy Samp Ingredients:

4cups Samp,soak in hot water
4Tsp Cremora/Ellis Brown
1pck cream of Mushroom Soup
2Tsp Rama,heep
Aromat original seasoning
Parsley finely chopped

Method:
*wash ur samp & soak in hot water for an hour
*drain & cook till tender
*lower ur heat and add ur cremora,then soup powder & finally your margerine (stirring occasionally)
Den add ur seasoning and parsley!

TURKEY CURRY

Ingredients
1kg turkey
1 big onion, chopped
1 garlic clove, minced
2 tblspn oil
1 tblspn mixed spices (i used dhania and Jeera)
2 tspn paprika
3 tblspn worcestersauce
2 tblspn tomato paste
1 cube chilli beef stock

Heat oil… fry onions for two minutes, add garlic, spices beef stock, worcester sauce and stir
Add turkey
Cover and cook on medium heat for approximately 20 minutes. Now add tomato paste and let it simmer and cook for 2min.

Dessert foodie selftaught HomemadeChocolateMousse

2 slabs Dark chocolate
5 eggs
100g Caster sugar
170g Unsalted butter

Method

Melt the chocolate in the bowl. Remove from the heat once melted and let it cool slightly. Separate the egg yolks from the egg whites. Beat the egg yolks and most of the sugar together until creamy and pale in colour (keep two teaspoons of sugar to one side for the egg whites).When it has cooled slightly, whisk the chocolate into the egg yolk and sugar mixture.

Melt the butter in a pan over a low heat, whisk the melted butter into the chocolate mixture. If it gets too thick, add a couple of tablespoons of water. In a bowl, whisk the egg whites and the remaining two teaspoons of sugar with an electric whisk until they’re light and fluffy and hold a soft peak. Do not over-beat.

Fold the egg whites into the chocolate mixture then spoon the chocolate mixture into a bowl or ramekins and refrigerate for about two hours.

Hi everyone, its been a while since I posted.

Potatoes with kidney beans, bacon, coriander, red onion and sour cream served with beef stew

Preheat the oven to 180 and scrub the potatoes, poke holes with a fork, and place on the baking sheet. Bake for 1 hour until tender. Remove from the oven and increase the oven temperature to 190. When cool to the touch, slice each potato in half and scoop out the flesh, leaving a ¼-inch lining of the potato in the shell. Drizzle the potato skins with olive oil, salt, and pepper and place the side you down. Roast for 10 minutes, turn, drizzle with more olive oil and a very generous sprinkle of salt, and roast for an additional 10 minutes, or until crispy. Save the scooped out potato flesh for another use.

Kidney bean filling- In a medium bowl, mix together the kidney beans, red onion, garlic, lemon juice, chili powder, coriander, bacon, black pepper and salt.

Pour the kidney beans fillings into the potatoes and garnish with sour cream and chilli explosion salt

Beef stew- Fry the stew, add garlic and ginger masala, babeque spice, salt, tomato sauce and continue frying, then add onion. When it starts sticking to the pot add water. When the beef stew is almost cooked add carrots and cook until the carrots are cooked. Then add a bit of beef and rosemary dry cooknin sauce and simmer for few minutes.

CUBED CHICKEN BREAST AND RICE

Recipe:
Ingredients
-Chicken Breast
-Green Peas
-Onion
-Carrots
-Rice
-Oil
-Chicken stock
-Rajah (Mild & Spicy)

-Paprika

Method
Cook ur rice nd set aside..
Boil ur carrot nd peas (don’t over boil )
In a pan: heat ur oil nd fry ur cubed chicken breast, finely chop ur onion nd add to the best when it’s golden, add ur spices altogether and fry for 3 minutes. Add ur veggies and rice into the pan nd done..

NB: I love dry food Dts y I left it there.. you can add a sauce or soup if you don’t love dry food. Enjoy

Easy night chicken and vegetable stir fry

RECIPE

INGREDIENTS
3 tbsp oil
4 chicken breasts cut into strips
Half onion sliced
2 cloves garlic crushed
Half each rainbow peppers cut into strips
3 carrots peeled and julienned
4 baby marrow sliced
2 sweet corn cut off the cob
1 cup stir fry sauce ( get it at Pick n Pay or any grocery store)
Cooked pasta or noodles
Basil ( optional)

METHOD
Heat oil in wok or frying pan and toss the chicken for 4 minutes
Remove and set aside
Add the onion and stir fry for few seconds
Add garlic, peppers, carrots, baby marrow , sweet corn and stir fry for 5 minutes
Add the chicken and cooked pasta stir to combine
Add in stir fry sauce and mix to combine ( add more sauce if you wanna)
Serve garnished with fresh basil

Sunday lunch is served

-Beef stew served with potatoes with bacon, sour cream and spring onion and pumpkin

Beef stew-
Fry the stew,
add garlic
and ginger masala,
babeque spice,
paprika,
salt,
tomato sauce and continue frying.
When it starts sticking to the pot add water.
When the beef stew is cooked add red onion and green pepper,
a bit of brown onion soup and simmer for few minutes.

Potatoes- When boiling the potatoes, add salt( boil the potatoes for 30 minutes. Just until the half way cooked)

Let the potatoes cool, when they are cool, make a cut half way. Marinade the potatoes in oil, garlic, mixed herb, salt and black pepper. Then put the potatoes in thd oven to continue cooking. In the meantime, fry bacon until crispy. When the potatoes are cooked, put sour cream on top of the potato, crispy bacon and spring onion.
